Lightened up Eggplant Parmesan-Guest Post

With Fall and cooler temps now upon us, I like to make heartier dishes, like this Lightened Up Eggplant Parmesan that I saw on Gina's Skinny Taste,  a little while ago. Heartier dishes can also be healthy.  This dish has baked eggplant with no breading, layers of lighter cheese and homemade Marinara Sauce, which makes it a winner.  My Hubby said that this was one of the best things that I have ever made. 

When I was asked to be a Guest Blogger for Kim from Liv Life I knew that I wanted to make Lightened Up Eggplant Parmesan.
