Lightened up Eggplant Parmesan-Guest Post

With Fall and cooler temps now upon us, I like to make heartier dishes, like this Lightened Up Eggplant Parmesan that I saw on Gina's Skinny Taste,  a little while ago. Heartier dishes can also be healthy.  This dish has baked eggplant with no breading, layers of lighter cheese and homemade Marinara Sauce, which makes it a winner.  My Hubby said that this was one of the best things that I have ever made.

When I was asked to be a Guest Blogger for Kim from Liv Life I knew that I wanted to make Lightened Up Eggplant Parmesan. Kim was one of the first bloggers I meant, when I started blogging over three years ago.  Kim’s blog features many healthy, delicious dishes like her Mango Cheesecake, Butttermilk Oatmeal Pancakes, California Corn Salad, Nutella Fudge Brownies , and her love of Quinoa.  I now have her love of Quinoa., as well.   Stop by Kim’s Blog to get  the Lightened Up Eggplant Parmesan  recipe and read my guest post.

    1. Pam,
Thank you for your kind words. If you use the lighter cheeses, it's low in fat, and heart healthy!
