Fall is finally here, and our leaves are starting to turn vibrant colors. I was afraid that because of the drought, that the leaves wouldn't be pretty this year, but Mother Nature came through. One thing that Fall means to me is apple cider, so we went to the local apple orchard extravaganza last weekend. We didn't pick apples, so there aren't any pictures of the orchards. There were so many people there, but it was a perfect Fall Day, cool and crisp. but sunny! We did buy apple cider however, at $6.99 for half a gallon, which is pretty pricey. They do have wonderful Apple Cider doughnuts though in their restaurant, and many gift shops.
Now I finally had apple cider. I knew exactly how to use some of it, so we made Pork Tenderloin on the rotisserie, and then I made a Cider Sauce with Sauteed Apples. You can also roast your pork tenderloin in the oven. Marvelous! Pork and apples go together, and the sauce complements the pork so well. Besides the apple cider the sauce has spices, herbs, onions and garlic. The cider sauce comes together quickly, and who doesn't love apples. What do you like to make with apples or apple cider? You won't be disappointed, if you try this recipe.
Roasted Pork Tenderloin with Apples and Cider Sauce
Adapted From Je Mange La Ville
2 cups apple cider
1 cup low-salt chicken broth
3/4 cup chopped onion
6 whole allspice
3 large fresh thyme sprigs (or a big rosemary sprig, which is what I used)
2 cinnamon sticks
2 teaspoons apple cider vinegar
1 bay leaf
1 tbsp unsalted butter or Smart Balance
1 cup low-salt chicken broth

2 cooking apples, peeled, cored, and sliced thin
1Tbsp Smart Balance or butter
2 16 ounce pork tenderloins, well trimmed
Olive oil
2 Rosemary sprigs
2 cloves garlic, minced
salt & pepper
2 16 ounce pork tenderloins, well trimmed
Olive oil
2 Rosemary sprigs
2 cloves garlic, minced
salt & pepper
Mix first eight ingredients in medium saucepan. Boil, and
reduce heat to simmer until mixture is reduced to 1 1/2 cups, about 20-30
minutes.
While sauce is simmering, in small fry pan, sauté sliced
apples in Smart Balance or butter until just tender.
Strain sauce pressing on solids to extract liquid. Discard
solids. Stir in sautéed apples. Whisk in
the butter and season with salt and pepper, if needed. Set aside
Roasted Pork Tenderloin
Brown on all sides in a oven-proof pan. Finish roasting in the preheated oven, 20-22 minutes or until the pork reaches 145 degrees.
Cover with foil and let rest 15 minutes. (We cooked our Pork Tenderloin on the rotisserie of our grill.) Serve sauce with apples over the meat.

Where were you? It looks like the kind of place my parents might enjoy and I want to tell them about it. The colors up there are definitely gorgeous and I've been curious as to how far ahead of me you guys were, so thanks. :)
ReplyDeleteThe only meat that I really like any kind of fruit with is pork and this looks absolutely delicious. I love the idea of the cider sauce, even if the cider was pricey.
