March seems to herald two things, St Patrick's Day and Thin Mint cookies from the Girl Scouts. I had bought two boxes of Thin Mints From Anna, my friend's Granddaughter, in early March. I had them hidden away out of sight out of mind, waiting for the perfect moment to unveil the cookies. If I hadn't hidden them, Scott would have scarfed them down in a minute. Now the boxes of thin mints only hold 32 cookies. These are like chocolate gold it seems. Maybe those pesky Leprechauns have something to do with this.
Leprechauns or not, I made these Thin Mint Cookie Crunch Brownies with the cookies. My rich go to brownie batter was studded with chopped up Thin Mint Cookies, 16 cookies, to be exact. Once the brownies were cooled, a Vanilla Butter Cream Frosting, tinted green, was spread on the brownies. Don't be afraid to slather it on thick. Then, sprinkle generously, crushed Thin Mint Cookies. Scott said that the brownies are "like Girl Scout Thin Mint Cookies on steroids, so minty." The Girl Scout cookies seem a little more crumbly, than previous years, but so good none the less.
I also bought Keebler's Grasshopper Mint cookies, which are very close to the Girl Scout Cookies, in case I needed more cookies for the brownies. The Keebler cookies were very close in flavor to the Girl Scout Cookies, so you can make these brownies, even if you don't have the Girl Scout Cookies.

Mint Cookie Crunch Brownies
Fudge
Brownies Adapted
from Better Homes and Gardens
Ingredients:
12 Tbsp butter, softened
3 squares, (3 oz) unsweetened
chocolate
1 1/2 c. sugar
3 eggs
1 1/2 tsp .vanilla
1 1/2 c. All Purpose Flour
Directions:
Fudge
Brownies
Preheat oven to 350 degrees
Line an 9x9x2 pan with aluminum foil
or parchment paper, edges overlapping. If using foil, spray the opposite side
of the foil Melt butter and chocolate. Remove from heat and stir in
sugar. Add eggs, and vanilla. Beat lightly until just
combined. Stir in flour and mix well. Fold in chopped up thin mint cookies.
Spread batter in pan. Bake in 350 degree oven for 25-30 minutes. Do
not over bake. Cool on rack. Leave brownies in pan.
Vanilla
Butter Cream Frosting
2 c powdered sugar
6 tbsp butter
1/4-1/3 c milk I used almond milk
Green food coloring
16 thin mint cookies, crushed (1 sleeve)
Beat butter with and electric mixer,
until light and fluffy. Gradually beat in powdered sugar, and milk, adding
until desired consistency. The butter cream should be in a spreadable,
thick layer. Tint food coloring to your desired shade of green, or leave
plain. Spread Vanilla Butter Cream over the cooled Brownie.
Generously sprinkle crushed thin mint cookies over the frosting. (I put the cookies in a zip lock bag, and
crushed with a rolling pin, no mess.) Refrigerate
at least 45 minutes, until firm. Leave in prepared pan.

We're holding our last Girl Scout booth tomorrow and then we're done for the season and all the Thin Mints that haven't been stashed away will be gone. I think your brownies are an excellent way to spread them out a bit and make them last even longer. They look delicious.

DeleteThe Leprechauns must have visited your house! I think that the Keebler cookies woll work well of rhese brownies, because the cookies are chopped, and put into the batter, and crushed to go on top.
