Whole Wheat Banana Pancakes with Walnuts, A healthy way to start your Day!


Are you looking for a healthy way to start your off your New Year 2013?  These Whole Wheat Pancakes are a healthy, delicious breakfast to jump start your day. These pancakes have whole wheat,  almond milk, Swerve, coconut oil, bananas, and walnuts. With a drizzle of warm maple syrup, these are the best pancakes, hands down.  Even Scott liked them, and Bailey, too.



I was the lucky winner of Kim@Liv Life's Swerve Sweetener giveaway. Thank you Kim! Swerve is an all natural plant based sweetener, Erythritol, which measures cup for cup like Sugar.  I got this  gift pack of two 1 lb. Swerve Sweetener packages along with an adorable Baking Kit  including spatulas, birthday candles, measuring cup and spoons, along individual Swerve Sweetener packets, all packaged in a cute little lunch box.  I love the lunchbox. I'm keeping  some of my cupcake liners in mine. Neither Scott nor I have diabetes, but we are watching carbs.  Swerve isn't in grocery stores yet, that I have seen, but you can order it online.

 I used Swerve Sweetener in place of the brown sugar in Kim@ Liv Life's recipe for Whole Wheat Banana Pancakes with Walnuts and these were the best pancakes that  we have had in a long time, and healthy, too. There was no chemical aftertaste like other sweeteners.  Besides the Swerve, there were mashed bananas and walnuts to round out the healthy ingredients. This recipe makes enough to feed a hungry family of four.  We should have cut the recipe in half, but we didn't, so we have yummy pancakes in the freezer for our next healthy breakfast.  Of course Bailey got her pancake, but we didin't get a pic of her wolfing it down.  Next time:)  Enjoy! 



Whole Wheat Banana Pancakes with Walnuts

 Adapted from Liv Life

Ingredients:

1 cup whole wheat flour
1 cup all purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 cup brown sugar (I used Swerve)
1 egg
1 1/2 to 1 3/4 cup milk (I used almond milk)
1 tsp vanilla extract
3 large ripe bananas, mashed
2 Tbs canola oil, (I used coconut oil)
diced bananas (optional)
chopped walnuts (optional)

Directions:
In a large bowl, combine flours, baking powder, salt, cinnamon, and nutmeg, whisking to combine.  In a smaller bowl whisk together the Swerve, milk, egg, oil, vanilla and mashed banana.

Add the wet ingredients to the dry ingredients, stirring until just combined being careful not to over mix.  Add a bit more milk if the batter is too thick for your preference.

Heat a skillet or griddle to medium heat.  Ladle batter into onto the hot cooking surface and cook until bubbles form on top – about 2-3 minutes. Flip and cook for a minute or two more.  Repeat with remaining batter.  Garnish with diced bananas, walnuts.

  2. You are amazing... I saw your pancakes on Facebook and thought "I need that recipe!! :)
    Love what you did with the swerve, and I'm also really liking the addition of the coconut oil. Fabulous breakfast! Liv would be proud.

  3. Wow and yum. I guess I should be saying congrats on the cool Swerve prize, but, wow. And yum. Those pancakes sound and look amazing. Stay warm! If we even have crunchy grass this morning, I can only imagine what you have!

      It was 12 degrees this morning, but it is supposed to warm up next week. You would need these pancakes to keep warm,If you were up North:)
