Apple Cinnamon Walnut Loaf


Fall is almost here!  We have been having temps in the 90's, but we're supposed to have low 70's by Friday.  I'm ready for Fall weather and Fall recipes. I got my new large container of Cinnamon at Costco, so I'm ready for all those wonderful recipes with cinnamon and apples,  cakes, muffins, pies etc. and later on, pumpkin recipes. There are so many apple recipes that I want to make.


Apples are now in season, and I had the perfect recipe to make with apples and cinnamon, Apple Cinnamon Walnut Loaf, incredible. This quick bread has my favorite flavors of Fall, apples, cinnamon, and walnuts.   Along with the apples, cinnamon, and walnuts, this quick bread has a caramelized cinnamon sugar crust, when you brush the bread pan with melted butter and sprinkled with a cinnamon sugar mixture before filling the pan. Your kitchen will smell wonderful, with all of the wonderful smells of cinnamon and quick bread baking. I could hardly wait to take the pictures, before eating a  warm slice of the apple bread bursting with apples, and tons of cinnamon flavor with cinnamon sugar crust. I'm definitely ready for Fall now.


I used Golden Delicious Apples from Michigan to make this quick bread.  I did get them at the grocery store.  The majority of the apple orchards in this area, and beyond have turned into mini amusement parks with rides and corn mazes.  Besides they charge an admission  fee to get into the orchard, and you can only pick 1/2 peck, 5-6 lbs. of apples. Are there apple orchards in your area, that only sell apples?  Well no matter where you buy your apples, make the Apple Cinnamon Walnut  Loaf, and you will be ready for Fall, too.  Enjoy! 

Apple Cinnamon Walnut Loaf  Adapted from Leah Eskin's Standoffish Cinnamon Loaf

Preheat oven to 325 degrees F

Ingredients:
2 teaspoons butter, melted I used coconut oil
1 cup sugar
11/2 teaspoons ground cinnamon
1/2 cup walnuts
1/2 cup (1 stick) unsalted butter, softened
2 eggs
1 cup Greek yogurt
1 teaspoon vanilla
13/4 cups flour
1 cup chopped apples  I used about 2
1 teaspoon baking soda



Directions:

1. Mix: Brush a large loaf pan with the melted butter or oil.  Stir together 1/2 cup of the sugar, the cinnamon.  Sprinkle 2 tablespoons cinnamon mixture along the bottom and sides of the pan. Mix the rest with the walnuts and set aside.

2. Fold: Cream softened butter, or add coconut oil and remaining 1/2 cup sugar with an electric mixer. Crack in eggs; fluff. Add in Greek yogurt and vanilla; fluff. Whisk together flour, and soda. Sprinkle flour mixture over yogurt mixture fold. Gently fold in chopped apples.  Mix in half the nut mixture; fold once or twice, aiming for a marbled effect.

3. Bake: Scrape batter into prepared loaf pan. Top with remaining nut mixture. Slide into a 325-degree oven and bake until a toothpick poked in the center comes out clean, 50 -60 minutes. Cool a bit, turn out on rack.  Enjoy!

In this recipe the initial step is brush the inside of the loaf pan with melted butter or oil, and sprinkle with a cinnamon sugar mixture.  Do not skip this step.  The edges get a wonderful caramelized sugar, cinnamon coating.  Soo good!



Today is September 11, 2013.  I will never forget 9/11/2001!

  4. Oh Becky, your Apple Cinnamon Walnut Loaf looks scrumptious! It may be a short while for fall to hit the west, and like you we're still hovering at 90 but we won't see 70s for awhile. Your post makes me year for the season to change...

      I think that we are having Fall temps now. This bread is perfect for Fall with all of the apples, and cinnamon.

  6. I love breads, and the flavors you have in this bread make is sound to good to pass up! Once I get to our orchard, i will be making this. We do have many orchards within an hour drive, and there is certainly no admission charge! One of them does have a corn maze, but other than that, it is just apples, apples, apples!

      All of the wonderful flavors in this bread, apples, cinnamon, and sugar have all of the flavors of apple pie, and who would pass up apple pie. I wuss that I lived closer to your orchards, like the way that it used to be around here:)

  7. Hello. I am new to your website and I made this last night, it was delicious. I made it exactly as per the instructions, I loved the marbled cinnamon nut mix through it. It was so moist and amazing warmed up the next day. It reminds me almost of apple pie. Next time I am going to add more spices like nutmeg, cloves and cardamom and reduce the sugar to 3/4 cup, was a bit sweet for us.
