Oatmeal Coconut Cherry MM Cookies

  
I made these Oatmeal Coconut Cherry MM cookies to round  out my Cherry fest. I saw these cherry MM"s and thought of making Oatmeal cookies with them. Then I saw Monet@Anecdotes and Apple Cores Chewy Coconut Cookies, and decided to add coconut to my oatmeal cookies. These cookies are addicting, with the chewy coconut and oatmeal, along with the cherry MM's. Now these MM's are cherry flavored, not real cherries, but they still taste good.  As you can see in the picture, they are a little larger than regular MM's, and they didn't bake well. The candy shells, that" don't melt in your hand", flake off of the cookies, and don't look pretty.  My hubby didn't care however, because there were more "rejects" for him to eat. Who eats your rejects?  I wouldn't recommend baking with them.  I should have strategically placed more of the MM's on the top of the dough, before the cookies were baked. Chalk this up to "Live and Learn." Do you dunk your cookies in milk, coffee, or tea?


I used my favorite Oatmeal Cookie recipe and added coconut.  You won't be able to stop eating these, so i recommend storing them in a far away place in your pantry, cupboard, or garage, where you don't see them:) Enjoy!

Oatmeal Coconut Cookies Adapted from QuakerOats.com

Ingredients
  • 1/2  cup (1 stick) plus 6 tablespoons butter, softened
  • 3/4  cup firmly packed brown sugar
  • 1/2  cup granulated sugar
  • 2  eggs
  • 1  teaspoon vanilla
  • 1-1/2  cups all-purpose flour
  • 1  teaspoon baking soda
  • 1  teaspoon ground cinnamon
  • 1/2  teaspoon salt (optional)
  • 3  cups  Oats (quick or old fashioned)  I used old fashioned oats
  • 1 cup flaked coconut
Directions
  1. Heat oven to 350 degrees F.
  2. Beat together butter and sugars until creamy.
  3. Add eggs, and vanilla; beat well.
  4. Add combined flour, baking soda, cinnamon and salt; mix well.
  5. Stir in oats and coconut; mix well.
  6. Drop by rounded tablespoonfuls onto ungreased cookie sheet.
  7. Bake 10-12 minutes or until golden brown.
  8. Cool 1 minute on cookie sheet; remove to wire rack

  4. I imagine that coconut and oats are the perfect guarantee for a wonderfully chewy as well as delicious cookie. I have spent the last few days on oatmeal cookies, they do make a great base for many add ins, but I did not think about coconut. Great idea and I love the extra touch with the m&m's!

      I got the inspiration to add the coconut when I saw Monet's Chewy coconut Cookies. The coconut adds a nice chewy texture with the oats.

  5. Oatmeal and coconut is a great combo! There are other flavors of M&Ms that are a bit larger drops than the usuals...I think the mint ones at Christmas are like that.

      I didn't have good results baking with the larger ones. Next time they will all sit on top of the dough.

  8. This oatmeal coconut cookie recipe looks great. You really got my attention with the m&ms you put in the cookies. They are my favourite. It sucks that they didn't bake well, but I'll try using regular m&ms or dried cherries instead. I'm sure these cookies are really addictive. Can't wait to try them!

    1. es, next time, I would use regular MM's or dried cherries, too. I had used the dried cherries in muffins, so I used the cherry MM's to change things up.

  9. i have make oatmeal cookies, I have make coconut oatmeal cookies but M&M coconut oatmeal cookies sounds like something i should bake really soon!

      Adding coconut to an oatmeal cookie recipe, gives it every an extra chewiness, so good. The MM's are good addition to the cookies, too.

  10. I do a pretty good job of eating the rejects, lol. I haven't tried those m&m's, but I did make oatmeal cookies yesterday and they came out too ugly to photo, so I've been eating them, lol. Thank you again Becky.
